Powdered cake donuts made with healthy gluten-free flours, goat milk yogurt and a sprinkle of fresh orange zest.
Ingredients
Dry:
- 1 1/4 cup brown rice flour
- 1/2 cup + 2 tablespoons arrowroot powder
- 2 tablespoons ground flax seed
- 1/2 teaspoons baking soda
- 1/4 teaspoon sea salt
Wet:
- 1 cup Happy Days Dairies Vanilla Goat Milk Yogurt
- 1/2 cup grape seed oil
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon orange extract
- Zest from 1 orange
Coating:
- 1/2 cup powdered sugar
Instructions
Preheat oven to 350F and set aside a 12-count medium-sized donut pan or a 24-count mini donut pan.
Add all dry ingredients to a bowl. Whisk to combine, set aside.
In a separate, medium-sized bowl, add wet ingredients and whisk until creamed.
Pour wet ingredients into dry and stir to combine.
Transfer batter to a large plastic bag or piping bag. Cut the corner of the bag and pipe the batter into the prepared donut pan.
Bake donuts for 18-20 minutes or, if you’re using a mini donut tray, bake for 8-10 minutes or until toothpick inserted comes out clean.
Remove the pan from the oven and immediately plop the donuts out of the pan. Place donuts on a cooling rack for at least 30 minutes to cool completely.
Add powdered sugar to a bowl and drop the donuts, one by one, in the sugar. Rotate in the bowl to cover and place back on the cooling rack. Dive in!
